My spotify is grayed out in my Alexa app, but every fix that I see online shows me that I have already done what needs to be done.
The only thing that I can think is that my wife's Spotify got hacked for a little bit by someone in Europe...could that be why we can't connect any more?

I am sorry that you are having this problem. Just to clarify, do you get any kind of error message as well? Try if the following helps, if it is still linked try to unlink first.
Use of music services may be subject to additional terms applicable to the respective service. You can unlink Alexa from a music service at any time by selecting Unlink account from Alexa in the Alexa app.
Link Other Music Streaming Services to Alexa
You can link your account with a supported music streaming provider in the Alexa app.
Use of music services may be subject to additional terms applicable to the respective service. To link your Apple Music subscription to Alexa, you must use Apple's two-factor authentication process.
From the menu, select Settings.
Select Music, and then Link New Service.
Select the music service provider and follow the on-screen instructions.
I have exactly the same issue, a couple of days ago I got an email saying my Spotify password had been reset due to 'detected suspicious activity'. I reset it and now I cannot connect it to my Echo. I get the same greyed out Spotify option on the Alexa app.
When I try to click on Link new service the Spotify option doesn't work.
